Gathered Together: Exploring Altai Kazakh Traditions and Delicacies
In the vibrant region of Altai, a unique project is underway to celebrate and share the rich cultural heritage of Kazakhstan. Funded by a governor's grant, the "All to the Table!" project is set to introduce different nationalities living within the region.
At the heart of Kazakh cuisine lies the iconic dish, beshbarmak. This traditional meal, meaning "five fingers," is a testament to Kazakh nomadic heritage. Consisting of boiled meat, usually horse, lamb, or beef, served with homemade noodles and a flavourful broth, beshbarmak is traditionally eaten by hand, symbolising hospitality and respect among Kazakh nomads.
Another significant Kazakh tradition is shashu. Often associated with hospitality and celebrations, particularly during the presentation of beshbarmak or other festive meals, shashu involves the ritual scattering of salt or flour by the head of the family or a respected elder. This custom symbolises blessing, purification, and good fortune, underlining the importance of food in Kazakh social and cultural life.
Kazakh cuisine is characterised by its emphasis on meats, often prepared simply by boiling or stewing to preserve natural flavours. Shared large platters and communal eating are key features in Kazakh dining customs, reinforcing social bonds. Other traditional dishes include kuyrdak (stir-fried liver, kidney, heart with onions and potatoes).
The Altai region and Kazakhstan share common ground in various aspects, such as cultural, family, and business relations. Kazakh families aim to pass on traditions, including faith and family customs, to the younger generation.
The "All to the Table!" project is not only about food. It also includes the filming of a program, where different nationalities living in the Altai region are introduced, showcasing their unique cultures and traditions.
Kazakh hospitality begins at the doorstep with the tradition of shashu, setting the tone for the warm and welcoming atmosphere that permeates Kazakh culture.
